The signature feature of the Liège waffle is the inclusion of imported Belgian pearl sugar. Derived from sugar beets, these coarse sugar pearls are folded directly into the dough. As the waffle cooks on the hot iron, the pearl sugar caramelizes into a perfectly crunchy, golden crust that encases a soft, chewy interior.
